Payoya Negra

‘Our emblematic wine, the result of our work recovering native Andalusian varieties. An authentic wine with great personality’

- Ana De Castro

Payoya Negra

The Payoya Negra, which gives this wine its name, refers to the native goat of the Sierra de Cádiz and the Serranía de Ronda, famous for the milk used to make Payoyo cheese. Inspired by this unique animal, a wine is born that reflects the character of the Andalusian territory.
With Sierras de Málaga Designation of Origin and 2022 vintage, it has been made with carefully selected grapes and aged for 12 months in French Allier oak foudres, untoasted and medium toasted, with the rest of its refinement in bottle. It is presented in a 75 cl moss-coloured Burgundy Autentique bottle.

Tasting Notes

Cherry red colour with violet notes. Aromas of black fruit, blackberries, blueberries, freshly cut grass, fresh with a final spicy touch.
On the palate it is creamy, fresh with well-integrated ripe tannins, and a long aftertaste. A wine with a marked personality of the terroir and the native varieties from which it comes.
